Lunch Idea Recipes



Chili Dog Wraps
Yields: 10 wraps Serving Size: 1 wrap

What you will need:

10 corn tortillas (6 to 8 inches in diameter)
10 hot dogs
1 can (15 to 16 ounces) bean-less chili
2 cups salsa
1 cup shredded Cheddar or Monterey Jack cheese (4 ounces)

What you will do:
  1. Heat oven to 350° F.
  2. Grease rectangular baking dish, 13x9x2 inches.
  3. Soften tortillas as directed on package.
  4. Place 1 hot dog and 3 Tbsp. chili on each tortilla.
  5. Roll up tortillas; place seam side down in baking dish.
  6. Spoon salsa over tortillas.
  7. Cover and bake 20 minutes.
  8. Sprinkle with cheese.
  9. Bake uncovered about 5 minutes longer or until cheese is melted.

Critter Sandwiches (These are open-faced sandwiches or mini pizzas)

Yields: 16 Sandwich Halves Serving Size: 2 halves or 2 "pizzas"

What you will need:

1 cup pizza sauce 8 bagels, split, or 8 toasted English muffin halves
2 cups shredded mozzarella or Cheddar cheese (8 ounces)
Assorted toppings (sliced pepperoni or Canadian-style bacon, sliced mushrooms, sliced ripe olives, chopped zucchini, and chopped bell pepper)

What you will do:

  1. Heat oven to 425° F.
  2. Spread 1 Tbsp. pizza sauce over each bagel half.
  3. Sprinkle each with 1 Tbsp. of the cheese.
  4. Allow children to arrange toppings on sandwiches to look like desired critters.
  5. Sprinkle with remaining cheese.
  6. Place on ungreased cookie sheet.
  7. Bake 5 to 10 minutes or until cheese is melted.

Easy Cheeseburger Pie
Yields: 6 slices Serving Size: 1 slice

What you will need:

1 pound ground beef
1 large onion, chopped (1 cup)
1/2 tsp. salt
1 cup shredded cheddar cheese (4 ounces)
1/2 cup pre-made biscuit mix
1 cup milk
2 eggs

What you will do:

  1. Heat oven to 400°F.
  2. Grease a 9-inch pie plate.
  3. Cook beef and onion until beef is brown; drain.
  4. Spread cooked beef in pie plate; sprinkle with salt and cheese.
  5. Stir remaining ingredients together until blended to make a batter/crust.
  6. Pour batter into pie plate.
  7. Bake about 25 minutes or until knife inserted in center comes out clean.
  8. Cool 5 minutes


Grilled Cheese Sandwich Sticks

Yields: 3 Sticks Serving Size: 3 Sticks

What you will need:

2 slices of bread
2 cheese singles
2 tsp. butter or margarine, softened
Salsa, spaghetti sauce, or ketchup for dipping (optional)

What you will do:

  1. Top 1 bread slice with the cheese.
  2. Place second slice of bread on top.
  3. Spread outside of sandwich with butter.
  4. Cook in skillet on medium heat until lightly or golden brown on both sides.
  5. Cut sandwich into 3 strips.
  6. Serve warm with dipping sauces and enjoy!

Ham and Cheese Tortilla Roll-Ups

Yields: 10 Roll-Ups Serving Size: 1 Roll-Up

What you will need:

1 1/2 cups reduced-fat shredded Cheddar cheese (6 ounces)
1/4 cup reduced-fat mayonnaise or salad dressing
1/4 cup fat-free sour cream
1 can (11 ounces) whole kernel corn with red and green peppers, drained
10 fat-free flour tortillas (6 to 8 inches in diameter)
10 slices (1 ounce each) fully cooked deli ham
Cilantro sprigs, if desired

What you will do:

  1. Mix cheese, mayonnaise, sour cream and corn.
  2. Top each tortilla with 1 slice ham.
  3. Spread 2 Tbsp. corn mixture over ham.
  4. Top with cilantro.
  5. Roll up.


Hashbrown Casserole

Yields: 15 Squares Serving Size: 1 Square

What you will need:

2 lbs. frozen hashbrowns
10 1/2 oz. can of cream of chicken soup
10 1/2 oz. can of cream of celery soup
8 oz. sour cream or plain yogurt
1/2 cup minced onion
1 cup shredded cheddar cheese
1/2 cup crushed cornflakes
2 Tbsp. butter or margarine, melted

What you will do:

  1. Preheat oven to 350° F.
  2. Combine potatoes, soups, sour cream, onion, and cheese.
  3. Spread into a 9x13 pan.
  4. Sprinkle cornflake crumbs over the mixture.
  5. Drizzle melted butter over top of casserole.
  6. Bake for 1 hour and cut into 15 squares.


Meatloaf Muffins

Yields: 12 Muffins Serving Size: 1 Muffin

What you will need:

1 1/2 lbs. ground beef 2 tsp. salt
1/2 lb. ground pork
1/2 tsp. thyme
2 cups soft bread crumbs
1/4 tsp. pepper
1 cup milk
1/3 cup brown sugar
1 egg, beaten
1/2 cup ketchup
1 tsp. Worcestershire sauce

What you will do:

  1. Preheat oven to 350° F.
  2. Grease muffin pan.
  3. Mix together meat, breadcrumbs, milk, egg, and Worcestershire sauce.
  4. Add salt, thyme, and pepper.
  5. Divide mixture into 12 equal portions and pack into muffin pan.
  6. Bake for 40 minutes.
  7. Mix brown sugar and ketchup.
  8. Set aside.
  9. After 20 minutes of cooking, spoon about 2 tsp. of the brown sugar and ketchup mixture on top of each muffin.
  10. Continue to bake for 20 more minutes.
  11. Serve warm and enjoy!!

Peanut Butter and Banana Wraps

Yields: 4 wraps Serving Size: 1 Wrap

What you will need:

1/2 cup creamy peanut butter
4 whole wheat or regular flour tortillas (8 inches in diameter)
1/4 cup honey
2 small bananas, sliced

What you will do:

  1. Spread 2 Tbsp. of the peanut butter evenly over each tortilla.
  2. Drizzle 1 Tbsp. of the honey over each tortilla.
  3. Top with banana slices.
  4. Roll up tortillas.


Potato Pups

Yields: 8 Pups Serving Size: 1 Pup

What you will need:

8 hot dogs
2 cups mashed potatoes
1/2 tsp. dry mustard
Paprika, optional
Grated cheese, optional

What you will do:

  1. Preheat oven to 375° F.
  2. Prepare mashed potatoes as directed on box or prepare homemade mashed potatoes.
  3. Mix dry mustard with mashed potatoes.
  4. Split hot dogs long way, but not all the way through.
  5. Fill opened hot dogs with about 1/4 of a cup of mashed potato mixture.
  6. Sprinkle top with paprika.
  7. Bake for 15 minutes or until slightly brown on top.
  8. Sprinkle with grated cheese, serve, and enjoy!

Quesadillas

Yields: 18 Wedges or 6 Quesadillas Serving Size:3 Wedges or 1 Quesadilla

What you will need:

2 cups shredded cheddar or Monterey jack cheese (8 ounces)
6 flour tortillas (8 to 10 inches in diameter)
1 small tomato, seeded and chopped (1/2 cup)
4 medium green onions, chopped (1/4 cup)
2 tsp. canned chopped green chilies
Chopped fresh cilantro, if desired

What you will do:

  1. Heat oven to 350°F.
  2. Allow children to spread 1/3 cup of the cheese evenly over half of each tortilla and sprinkle tomato, onions, chilies and cilantro over cheese.
  3. Fold tortillas over filling.
  4. Place on ungreased cookie sheet.
  5. Bake about 5 minutes or just until cheese is melted.
  6. Serve quesadillas whole, or cut each into 3 wedges, beginning cuts from center of folded sides.


Sloppy "Dawgs"

Yields: 8 "Dawgs" Serving Size: 1 "Dawg"

What you will need:

1 tsp. vegetable oil
1/2 cup chopped green bell pepper
1/3 cup chopped onion
1/2 cup barbecue sauce
1 can (8 ounces) tomato sauce
1 pound hot dogs, cut into 1/4-inch slices
8 hot dog or hamburger buns, split

What you will do:

  1. Heat oil in 10-inch skillet over medium heat.
  2. Cook bell pepper and onion in oil, stirring occasionally, until onion is tender.
  3. Stir in barbecue sauce, tomato sauce and hot dogs.
  4. Simmer uncovered 10 minutes, stirring occasionally.
  5. Fill buns with hot dog mixture.

Stuffed Hamburger Roll

Yields: 13 Slices Serving Size: 1 Slice

What you will need:

1 lb. loaf French bread
1 1/2 lbs. ground beef
1/4 cup chopped onion
2 10.5 oz cans of cream of mushroom soup
1 10 oz. can of crushed pineapple
1 cup grated cheese (your choice)

What you will do:

  1. Cut bread in half lengthwise.
  2. Scoop out the insides of the bread and break into small pieces.
  3. Brown ground beef and onions.
  4. Add soup, cheese, pineapple, and pieces of bread.
  5. Mix together and put the filling back into the bread.
  6. Close and wrap in foil.
  7. Bake at 350ºF for 35 minutes.
  8. Cut into 13 slices and serve.


Very Easy Chicken Casserole

Yields: 12 Squares Serving Size: 1 Square

What you will need:

4 boneless chicken breasts cut into small chunks
1 bag of frozen broccoli, cut into small bites
Swiss and American cheese or any other cheese
2 boxes of stuffing mix, made according to directions on box

What you will do:

  1. Pre-heat oven to 350° F.
  2. Coat 9x13 pan with butter or margarine.
  3. Layer broccoli on the bottom, then Swiss cheese, then chicken, then cheese.
  4. Layer stuffing on top.
  5. Bake for 35-40 minutes.
  6. Serve warm.
