an important part of a balanced diet. Both whole-grain and enriched breads
and cereals provide carbohydrate (starch); the vitamins, thiamin, riboflavin,
niacin; and the mineral, iron. Whole grains are also sources of dietary
fiber and provide the vitamin, folate, and the minerals, zinc and magnesium.
