What are storage conditions for sweetpotatoes?
Immediately after harvest, sweetpotatoes should be cured by holding at 85º F. and 95 percent relative humidity to promote formation of wound tissue over cuts and scratches. Length of curing time should be 1 to 2 weeks until cuts and scratches are sealed. After curing, the roots should be stored at 60º F. and 85 percent relative humidity.
