Research Experience and Interests:
General Interests: My research addresses a broad spectrum of problematic issues in food safety, microbiology, quality, processing and shelf life. My research program is focused on using non-thermal novel technologies (essential oils, natural protein extract, electrolyzed water, chlorine dioxide gas and irradiation) to reduce the risk of foodborne illnesses. My current work also focuses on using both modern molecular (RT–PCR) and traditional methods for pathogens detection in/on food.
Current Research Programs:
- Application of RT-PCR for detection of Salmonella enteric, Vibrio Parahaemolyticus, E. coli 0157:H7, Campylobacter jejuni, and Listeria monocytogenes in imported seafood.
- Utilization of X-ray technology as a post-harvest processing (PHP) for oysters to reduce the risk of Vibrios on oysters.
- Investigate the inactivation effect of X-ray against Vibrio Parahaemolyticus, Vibrio Vulnificus, E. coli 0157:H7, Listeria monocytogenes, Shigella and Salmonella enterica in seafood and fresh produce.
- Inactivation of Cronobacter sakazakii in dairy products using X-ray irradiation.
- Controlling inherent microbial growth in seafood and fresh produce during processing and storage by X-ray irradiation.
- Evaluate the quality and the shelf life of seafood and fresh produce after treatment with X-ray and during storage.
Industry projects
- Seafood industry [in Mississippi (Crystal Seas Seafood LLC) and Louisiana (Ameripure Processing Company, Inc)]: Validation study and quarterly verification testing of Vibrios.
- Produce, bakery products and eggs industries: Isolation and identification of pathogenic and spoilage bacteria from produce, bakery products and egg for the food industry.
- Kentucky Fried Chicken Company-KFC (new chicken breast preparation process): Evaluation of the survival, before and after cooking and during refrigerator storage, of four pathogenic bacteria externally and internally inoculated onto/into the chicken breasts (Listeria monocytogenes, Salmonella enterica, Staphylococcus aureus, and Clostridium perfringens), before and after cooking and during storage at refrigerator temperature.
